Banana Almond Flour Cookies
These clean ingredient cookies are beyond DELICIOUS! Because of the guilt-free ingredients, low-sugar and high-fiber content, they can be enjoyed for breakfast or as a healthy dessert. But, beware- they are seriously addicting. When I first sampled them, I mindlessly ate five!
The best part of the recipe is that the prep time is less than five minutes! After they bake, the consistency of the cookies are a pillowy soft with a gooey center, but with crunchy edges! An optional suggestion is to drizzle some warm peanut or almond butter on them and enjoy with a warm cup of tea or coffee!
Ingredients:
3 tbsp coconut oil (melted)
1 egg (beaten)
1.5 bananas (very ripe)
2 cups almond flour
1/2 cup flax meal
1/2 tsp pink Himalayan alt
1 tsp ground cinnamon
1 tsp ground nutmeg
1 tbsp vanilla extract
1/4 tsp baking soda
Instructions:
Preheat oven to 350F
Combine all ingredients and mix well
On parchment paper, drop about 1/2 tbsp of dough and flatten out
Slice the other 1/2 banana and top the cookies. Also optional to top with extra ground cinnamon
Bake for about 20 minutes
