Lamb Meatballs Plate
For the lamb meatballs:
1/2 lb ground lamb meat. You can also use ground chicken if you prefer to avoid red meat.
1 egg
1/4 cup onion, chopped
4 garlic cloves, minced or crushed
2 tbsp fresh parsley, chopped
2 tbsp olive or avocado oil
1 tsp zahtar spice
1 tsp garlic powder
S&P to taste
How to:
Preheat oven to 425F. Combine all the ingredients in a bowl and mix well. Line a baking sheet with parchment paper and create meatballs using your hands. Bake for about 20 minutes.
For the veggies:
Peel and chop 1 medium zucchini and 1 small eggplant. Sauté in a medium skillet with avocado or olive oil. Season with salt and garlic powder.
For the rice:
I used white Jasmine and cooked as directed on the packaging, then added 1 tbsp butter, salt and garlic powder.
