Lamb Meatballs Plate

For the lamb meatballs:

  • 1/2 lb ground lamb meat. You can also use ground chicken if you prefer to avoid red meat.

  • 1 egg

  • 1/4 cup onion, chopped

  • 4 garlic cloves, minced or crushed

  • 2 tbsp fresh parsley, chopped

  • 2 tbsp olive or avocado oil

  • 1 tsp zahtar spice

  • 1 tsp garlic powder

  • S&P to taste

How to:

  • Preheat oven to 425F. Combine all the ingredients in a bowl and mix well. Line a baking sheet with parchment paper and create meatballs using your hands. Bake for about 20 minutes.

For the veggies:

  • Peel and chop 1 medium zucchini and 1 small eggplant. Sauté in a medium skillet with avocado or olive oil. Season with salt and garlic powder.

For the rice:

  • I used white Jasmine and cooked as directed on the packaging, then added 1 tbsp butter, salt and garlic powder.
