Smokey Lamb Meatball Mediterranean Bowl
What you’ll need for the meatballs:
1 package ground lamb
1/4 cup white onion, chopped
Handful spinach, chopped
2 cloves garlic, minced
1 egg
1 tsp sea salt
1 tbsp dried parsley
1 tbsp smoked paprika
What you’ll need for the bowl:
1-2 cups cauliflower rice (depending on how hungry you are)
1 mini cucumber, chopped
4-5 cherry tomatoes, chopped
Kalamata olives, chopped
Handful chickpeas
2 tbsp olive oil
2 tsp apple cider vinegar
sea salt + oregano
Meatballs how-to:
Preheat oven to 425F
Combine all meatball ingredients in a medium bowl and use your hands to mix well
Line baking sheet with parchment paper and using your hands, roll meatballs. If you have a food scale, try to make sure they are the same size- I measured 1.5oz per meatball. If not, eyeball as close as you can to ensure they’re cooked evenly.
Bake for about 10 minutes then using tongs, flip the meatballs individually and bake for another 5-7 minutes
Bowl how-to:
In a small skillet, heat olive oil and sauté cauli rice. Spice to taste.
Chop cucumber, tomatoes, olives + chickpeas. Dress with olive oil + apple cider vinegar + spices to taste.
Combine all together and enjoy! xx
