Smokey Lamb Meatballs

What you’ll need for the meatballs:

  • 1 package ground lamb

  • 1/4 cup white onion, chopped

  • Handful spinach, chopped

  • 2 cloves garlic, minced

  • 1 egg

  • 1 tsp sea salt

  • 1 tbsp dried parsley

  • 1 tbsp smoked paprika

What you’ll need for the bowl:

  • 1-2 cups cauliflower rice (depending on how hungry you are)

  • 1 mini cucumber, chopped

  • 4-5 cherry tomatoes, chopped

  • Kalamata olives, chopped

  • Handful chickpeas

  • 2 tbsp olive oil

  • 2 tsp apple cider vinegar

  • sea salt + oregano

Meatballs how-to:

Lamb Meatballs
  • Preheat oven to 425F

  • Combine all meatball ingredients in a medium bowl and use your hands to mix well

  • Line baking sheet with parchment paper and using your hands, roll meatballs. If you have a food scale, try to make sure they are the same size- I measured 1.5oz per meatball. If not, eyeball as close as you can to ensure they’re cooked evenly.

  • Bake for about 10 minutes then using tongs, flip the meatballs individually and bake for another 5-7 minutes

Bowl how-to:

  • In a small skillet, heat olive oil and sauté cauli rice. Spice to taste.

  • Chop cucumber, tomatoes, olives + chickpeas. Dress with olive oil + apple cider vinegar + spices to taste.

  • Combine all together and enjoy! xx
