Turkey Meatballs with Jalapeño, Apple & Kale

Turkey Meatballs

This photo might not look like much, but OMG these turkey meatballs filled with jalapeño, apple and kale are the perfect combination of crispy and tender, hot and sweet, and SO flavorful!! They are my new favorite weekday dinner (with leftovers for lunch) because they take under 20 minutes to make! Try them out for yourself and combine with zoodles, sautéed veggies, brown rice, salad, etc.

 

Ingredients:

  • 1 package organic ground turkey

  • 1 jalapeño, minced without seeds

  • 1/4 cup kale, chopped/ minced

  • 1/4 apple, chopped/ minced (I used honey crisp)

  • 1 oz white or Spanish onion, chopped/ minced

  • 1 large egg

  • 1/4 cup almond meal

  • 1 tbsp flax meal

  • 1 tbsp salt

  • 1/2 tbsp black pepper

  • 1 tbsp garlic powder

  • 1 tbsp oregano

  • 1 tsp chili flakes

  • optional: 1 tbsp raw honey

 

Instructions:

  • Combine all ingredients in a large bowl and mix well (I use my hands to make sure everything is combined evenly)

  • Preheat oven to broil

  • Heat up your cast iron skillet and pour a generous amount of avocado oil

  • Form meatballs with your hands and place in skillet, about 1/2 inch a part if possible

  • Cover and cook for about 2-3 minutes, then flip with tongs and cook for another 3-4 minutes

  • Place into oven and broil for about 3-5 minutes until the outside is golden brown

  • Enjoy!
