Vegan Butternut Squash Alfredo
This is NOT mac n cheese😱 Would you believe me if I told you that I have NEVER had mac n cheese?! Crazy, I know. But I actually hated cheese growing up- still kinda do. Sue me.
This beauty is VEGAN BUTTERNUT SQUASH ALFREDO and it’s the yummiest mommy + me comfort food🤤
Here’s what you’ll need:
+ 1 small butternut squash or about 2-3 cups pre chopped cubes
+ 1 small/ medium yellow onion
+ 2 garlic cloves, chopped
+ 2 cups veggie broth
+ 3 tbsp olive oil
+ 1 tbsp fresh sage, chopped
+ S&P to taste
+ your fav pasta (I used Banza elbows)
+ if you’re not feeling vegan, optional Parmesan cheese as garnish
How to:
+ in a large skillet, heat olive oil and add sage until it gets crispy. Then remove it with a spoon and set it aside.
+ in the same skillet, add onion & garlic and let that sauté for a few minutes. Add the squash, broth and S&P. Cover and let that simmer for 10-12 min until you can stick a fork through the squash.
+ while that’s simmering, cook pasta as instructed. Drain and set aside.
+ transfer the squash to a blender and add that cooked sage. Blend until it’s puréed.
+ pour over your cooked pasta, mix well, top with optional Parmesan cheese or chili flakes for spice and ENJOY! Xx
