Chia Pudding with Strawberry Jam

CHIA PUDDING

+ 1/2 cup DF milk of choice (I prefer oat)

+ 2 tbsp chia seeds

+ 1 tsp honey

Combine all ingredients in mason jar, mix well and refrigerate overnight

STRAWBERRY JAM

+ 1 package frozen strawberries

+ 2-3 tbsp chia seeds

+ 1/2 lemon, juiced

+ 1 tbsp honey (I prefer Manuka)

+ 1 tsp coconut oil

In a small skillet, heat coconut oil and add frozen strawberries. Using a rubber or wooden spatula, press on the strawberries as they cook until they are mashed. Add chia seeds, honey and lemon. Stir well and then let cool. Transfer to a jar and refridgerate.
