Coconut Yogurt Bowl

One of my favorite grab-and-go breakfast ideas for the busy bee! This dairy-free, fiber-filled parfait is delish, clean and filling! It's also great for meal prepping because the recipe gets more delicious overnight and travels well!

 

Ingredients:

  •  Coconut yogurt (I look for one with no added ingredients, just coconut meat, water & probiotics)- I’m also mindful of the fat, so if it’s very high, then I’ll cut the container into 2 servings)- Coyo and Coconut Cult are both great brands!

  • 1 tsp chia seeds (healthy fat & fiber)

  • 1 tsp cacao nibs (fiber & antioxidants)

  • 1 tsp bee pollen (a complete protein with countless vitamins and minerals)

  • Berries (I prefer blueberry & raspberry, organic)

  • A serving of your favorite granola (I switch it up between original and paleo)

  • Pinch of coconut flakes (optional)

Instructions:

  • Combine all the ingredients & enjoy! I like to make a mini parfait in a mason jar the night before & grab it in the AM for a quick and easy breakfast!
