Carrot Ginger Dressing

Dressing Ingredients:

  • ⅓ cup olive oil

  • 1/4 cup toasted sesame oil

  • ⅓ cup rice vinegar (can also sub for apple cider vinegar)

  • 2 large carrots, peeled and diced or chopped thin (you can also use baby carrots ~ about 3-4 cups)

  • 2 tbsp peeled and chopped fresh ginger

  • 2 cloves fresh garlic

  • 2 tbsp lemon or lime juice

  • 1 1/2 tbsp honey

  • ¼ teaspoon salt, more to taste

In my salad:

  • Romaine lettuce

  • Cucumber

  • Cherry tomato

  • Scallion onion

  • Sesame seeds

  • You can also add red cabbage and red onion

Instructions:

  • Combine all dressing ingredients in a blender & blend on high until creamy

  • Store in refrigerator for up to 1 week
