Carrot Ginger Dressing
Dressing Ingredients:
⅓ cup olive oil
1/4 cup toasted sesame oil
⅓ cup rice vinegar (can also sub for apple cider vinegar)
2 large carrots, peeled and diced or chopped thin (you can also use baby carrots ~ about 3-4 cups)
2 tbsp peeled and chopped fresh ginger
2 cloves fresh garlic
2 tbsp lemon or lime juice
1 1/2 tbsp honey
¼ teaspoon salt, more to taste
In my salad:
Romaine lettuce
Cucumber
Cherry tomato
Scallion onion
Sesame seeds
You can also add red cabbage and red onion
Instructions:
Combine all dressing ingredients in a blender & blend on high until creamy
Store in refrigerator for up to 1 week
