Tangy Garlic & Herb Chicken over Greek Salad
Chicken Ingredients:
1 package chicken breast (sliced thin if possible)
5 fresh garlic cloves, minced
1/4 cup yellow onion, chopped
1 lemon, squeezed
1/4 cup fresh parsley, chopped
1/2 cup olive oil
Splash of balsamic vinegar (add more to taste)
Splash of red wine vinegar
Salt, pepper, oregano, garlic powder- to taste
Salad:
Tomato
Cucumber
Red onion
Fresh Parsley
Capers
Dressing: olive oil, red wine vinegar, salt, pepper & oregano
Instructions:
Combine all chicken marinade ingredients in a small bowl and mix well.
In a larger bowl, place the chicken and pour the marinade over. Make sure it’s evenly distributed.
Refrigerate for about 30 minutes. The longer the better.
In a medium/ large skillet, cook chicken on medium heat and cover with lid for about 3-4 minutes each side until cooked through.
Slice the chicken and place over dressed salad. ENJOY!
