Cauliflower Mash
Ingredients:
2 medium cauliflower heads (or 1 large)
2 cloves fresh garlic
1/4 cup + 3 tbsp dairy-free milk (I used cashew)
Handful fresh parsley, chopped
Salt to taste
Instructions:
Steam cauliflower until soft - about 15-20 minutes. Check that you can stick a fork in the florets
Strain cauliflower and transfer to blender or food processor and add the remainder of the ingredients
Blend until smooth. ENJOY!
