Cauliflower Mash

Cauliflower Mash

Ingredients:

  • 2 medium cauliflower heads (or 1 large)

  • 2 cloves fresh garlic

  • 1/4 cup + 3 tbsp dairy-free milk (I used cashew)

  • Handful fresh parsley, chopped

  • Salt to taste

Instructions:

  • Steam cauliflower until soft - about 15-20 minutes. Check that you can stick a fork in the florets

  • Strain cauliflower and transfer to blender or food processor and add the remainder of the ingredients

  • Blend until smooth. ENJOY!
