Crispy Baby Potatoes
What you’ll need:
1 bag of baby potatoes (could be white, red or a medley)
2 cloves fresh garlic
A few stalks of fresh parsley, de-stemmed and chopped
2 tbsp avocado oil
2-3 tbsp olive oil
Salt & garlic powder to taste
Optional: 1-2 tbsp of grated Parmesan cheese
How to:
In a small/ medium pot, boil the baby potatoes for about 7-10 minutes until you can stick a fork through them. Drain and place on a plate or cutting board to slice the potatoes in half with a knife.
In a medium skillet, heat avocado oil and transfer halved potatoes. On medium/ high heat, sauté until they become golden and crispy. (*the more oil you add, the crispier they will get)
Transfer to a medium bowl and add the remainder of the ingredients.
