Summer String Bean Salad
What you’ll need:
1 package of string beans
1 package of snow peas or sugar snap peas
1/4 cup red onion, minced or diced
1/4 cup sliced almonds
8-10 fresh mint leaves, chopped
2-3 cloves of garlic, minced
Salt & pepper to taste
2 tbsp avocado oil
1-2 tbsp olive oil
2 tbsp apple cider vinegar
1/2 lemon
How to:
In a medium pot, boil the string beans for about 3-5 minutes until they soften. Drain and set aside.
In a medium skillet, heat avocado oil and add the snow peas or sugar snap peas. Sauté for around 3 minutes and add the cooked string beans. Continue to sauté for 5-7 minutes on medium heat.
Transfer to a bowl and add the remainder of the ingredients. Mix well!
*If you prefer less of a garlic/ onion flavor, then add those ingredients to the skillet when cooking the green beans.
