My Go-To Tzatziki Dip
This is one of my absolute favorite dips / spreads/ condiments- whatever you want to call it. I make a fresh batch weekly and keep in my fridge to have on hand. A few things I love using it for:
A refreshing dip for my veggies (cucumber, carrots, radishes, celery, etc.) as a snack
Grilled veggies and chicken
A dollop on brown Jasmine rice or couscous… it’s unreal
What you’ll need:
1 single serving of full fat Greek yogurt (you can also sub coconut yogurt for a vegan option)
1 Persian (or small) cucumber, minced or chopped very fine
1/2 lemon, squeezed
3-4 fresh mint leaves, chopped
2 stalks fresh dill, chopped
2 garlic cloves, minced
1 tbsp olive oil
Salt & dried oregano to taste
Just combine all the ingredients in a medium bowl, mix well and enjoy!
