Paleo Chicken Fingers

Chicken fingers are my ultimate childhood favorite meal. I used to order them whenever possible at restaurants, but we all know that they're not the healthiest option outside of the home. So, here is a paleo, low-carb version that's baked instead of fried. A great protein to have with a meal and accompanied with a veggie side! Totally guilt-free and easy to make! p.s. it’s a great kids meal with a side of baked or air fried sweet potato fries!

 

Ingredients:

  • 1 package chicken breast, cleaned and sliced into strips

  • 1 egg or 2 egg whites

  • 1 cup almond meal

  • 1 tsp salt

  • 1 tsp pepper

  • 1 tbsp oregano

  • 1 tbsp parsley

  • 1 tbsp garlic powder

  • 1 tbsp smoked paprika

 

Instructions:

  • Preheat oven to 400F and line baking sheet with parchment paper

  • Cut the chicken breast into thin strips (option to pound them or cut in half to make thinner)

  • On a medium plate combine the almond flour and all spices

  • In a separate, small bowl, whisk the egg whites

  • Dip the chicken into the egg whites then coat both sides in the almond flour mix and place on baking sheet

  • Bake for about 15 minutes and flip each piece, bake for another 5 minutes until golden

  • Serve with choice of ketchup, honey mustard or hot sauce

  • Enjoy!
