Paleo Chicken Fingers
Chicken fingers are my ultimate childhood favorite meal. I used to order them whenever possible at restaurants, but we all know that they're not the healthiest option outside of the home. So, here is a paleo, low-carb version that's baked instead of fried. A great protein to have with a meal and accompanied with a veggie side! Totally guilt-free and easy to make! p.s. it’s a great kids meal with a side of baked or air fried sweet potato fries!
Ingredients:
1 package chicken breast, cleaned and sliced into strips
1 egg or 2 egg whites
1 cup almond meal
1 tsp salt
1 tsp pepper
1 tbsp oregano
1 tbsp parsley
1 tbsp garlic powder
1 tbsp smoked paprika
Instructions:
Preheat oven to 400F and line baking sheet with parchment paper
Cut the chicken breast into thin strips (option to pound them or cut in half to make thinner)
On a medium plate combine the almond flour and all spices
In a separate, small bowl, whisk the egg whites
Dip the chicken into the egg whites then coat both sides in the almond flour mix and place on baking sheet
Bake for about 15 minutes and flip each piece, bake for another 5 minutes until golden
Serve with choice of ketchup, honey mustard or hot sauce
