GF Chocolate Chip Blondie Cake
YOU GUYS. This is probably my new favorite dessert of all time!! I was looking to experiment in my kitchen and for some reason was craving a blondie- a very rare craving since brownies are usually my go-to.
So, I googled a few recipes and all of the ones that came up were way too unhealthy for me to actually enjoy. I cant fully enjoy something I made knowing that it has crappy ingredients. Anyone with me?? I personally like to feel GOOD after any meal or snack, not regretful, bloated and sluggish.
Not knowing how it would turn out, and only an hour before I had to leave for dinner at a friends apartment AND being the one responsible for bringing dessert (for those of you who watched my Instagram stories already know), I threw my healthier ingredients into a bowl and crossed my fingers that I wouldn't have to make stop at a bakery after this. As soon as it was ready, it came out of the oven looking golden and super fluffy- so I threw some foil over it and left.
I prefaced dessert with "I honestly don't know how this will taste and I'm prepared to order dessert right now". They all took a bite and couldn't stop gawking over how good it was. The next day, I made the same thing for my family and got the same reaction.
Long story short- you guys need this GF chocolate chip blondie in your life ASAP!!
Ingredients
1 cup coconut sugar
½ cup grass-fed butter, softened
1 large egg
1 teaspoon vanilla extract
½ teaspoon baking soda
½ teaspoon sea salt
1 cup dark chocolate chips or chunks
Instructions:
Preheat oven to 350F and line baking pan with coconut oil or parchment paper.
In a mixer or large bowl, combine butter and coconut sugar and mix well. Add in egg and vanilla and continue mixing.
Add in GF flour and baking soda and mix until texture is creamy. Add in chocolate chips.
Pour the mixture into baking pan and top with some extra chocolate chips.
Bake for about 30 minutes until the top turns golden brown.
