Peanut Butter Chocolate Chip Cookies
What you need:
1/3 cup peanut butter (can also use any nut butter: cashew, almond, etc.)
1 1/2 cups almond flour
1 egg (or flax egg if vegan)
1 tbsp dairy-free milk (almond or cashew)
3 tbsp honey (or maple syrup if vegan)
1/4 cup coconut oil melted
1 tsp vanilla extract
1/4 tsp baking soda
dash of cinnamon
pinch of sea salt
1/4 cup semi-sweet chocolate chips (can also use dark chocolate or break down a chocolate bar into small chunks)
How to:
Preheat oven to 325F
Combine all ingredients (starting with the egg, whisked) in a medium bowl and mix well with spatula
Line a baking sheet with parchment paper
Use a wet spoon to scoop out batter and use your (wet) hands to roll into a ball then flatten onto baking sheet
*I like my cookies flatter but any depth works! They will not expand, so the depth you make them is the one you’ll get as a result
Sprinkle top of cookies with a tiny bit of sea salt
Bake for 10-12 minutes
Let cool and enjoy!
